honestly, most people don't even notice. everything we serve is vegetarian and most of it is vegan, no meat, no fish, ever, but it's built around flavour first. even the dishes that taste like they shouldn't be, like our birria quesatacos made with re-defined 3D-printed "pork" or our mushroom carnitas, are completely plant-based, and meat-eaters tend to leave as the biggest fans.
